Homemade Strawberry Chia Seed Jam (No Refined Sugar!)

There’s something sacred about preserving the goodness of God’s creation. When we take fresh strawberries—bright, sweet, and brimming with life—and turn them into a spread that nourishes our families, it becomes more than just a recipe. It’s an act of gratitude.

This simple, naturally-sweetened strawberry chia seed jam is one of our favorite ways to use up seasonal berries. It’s quick, delicious, and free of refined sugar or artificial pectin. Best of all, it only takes about 20 minutes from start to finish—and no canning required!

🍓 Strawberry Chia Jam Recipe

Ingredients:

  • 2 cups fresh strawberries, hulled and chopped (frozen works, too—just thaw first)
  • 2–3 tablespoons maple syrup or raw honey (adjust to taste)
  • 1 tablespoon lemon juice (optional, but helps preserve color and adds brightness)
  • 2 tablespoons chia seeds
  • ½ teaspoon pure vanilla extract (optional, but heavenly)

🫙 Instructions:

  1. Cook the berries
    In a small saucepan over medium heat, add your strawberries and lemon juice. Stir occasionally until the berries start to break down and get juicy—about 5–8 minutes. You can mash them with the back of a spoon or potato masher to your desired consistency (chunky or smooth, you decide!)
  2. Sweeten naturally
    Once the strawberries are soft and bubbly, stir in the maple syrup or honey. Taste and adjust the sweetness as needed—this part is up to your family’s preferences and how sweet the berries are naturally.
  3. Thicken with chia
    Remove the pan from heat and stir in the chia seeds. Let the mixture sit for 5–10 minutes to allow the chia to work its thickening magic. Stir in the vanilla extract if you’re using it.
  4. Cool and store
    Transfer the jam into a clean glass jar and let it cool to room temperature. Then, refrigerate. It will thicken further as it chills. This jam keeps well in the fridge for about 1–2 weeks—or freeze in small portions for later use!
