Gyro night is a thing over here and I am excited to share some of the wonderful recipes that have become staples in our home from this meal on repeat! Whether you enjoy lamb or beef gyros, or prefer falafel when you have pita, these crispy, lemony, garlicky potatoes will punctuate any Greek inspired fare with a delightful burst of flavor.

This impacts how I roast my Greek potatoes. If you are going to make sourdough pita too, you can simply allow your potatoes to roast at the higher temps required for your pita to bake during the last 20 minutes. As you take pita in and out of the oven, keep an eye on those taters and pull them out if they are getting too crispy.
Feta cheese is a nice addition to these potatoes.
We typically have feta cheese as a part of our toppings for gyros as well as mixed into our homemade tzatziki sauce, so I don't typically add feta to our Greek potatoes. That said, you can't go wrong adding feta to these after roasting if you don't have it in other parts of your meal.
