This pita doesn't keep well.
I know it's a bummer, but this is make it and eat it pita, not leftover pita. Don't let that stop you from making it! Just prepare enough for the one meal. If you really want extra for another day, I highly recommend warming a wet tea towel and wrapping the pita in it when you want to eat them again.
These do make excellent pita chips.
Have leftovers and don't know what to do with them? Spray a baking sheet with oil. Use a pizza wheel to cut the pita into 8 triangles each. Spray the triangles with oil on the baking sheet and sprinkle with garlic, onion, oregano, parsley, etc. Bake on 400f for 10 minutes and you have pita chips! Excellent with hummus or babagounash.
